Nutrition and Dietary

Through dedication to Nutrition Care Excellence and Cultural Respect, Sioux San Nutrition and Dietary Service will sustain it reputation as Provider of Choice for Nutrition and Food services.

Nutrition and Dietary Services consists of three main components providing service as follows:

  1.  Food Production and Service seven days a week with two shifts working from 0530 to 1800 hours.

  • Staffing
    • One CO-5 Registered Dietitian/Licensed Nutrition
    • Three WG-8 Senior Cooks
    • One WG-6 Junior Cooks
    • One Contract Food Service Worker
  • Food Service is provided to Hope Lodge residential clients; Visiting Health Care students and Temporary Physicians for the SU and EPI programs; and GMS/Pediatric/Mental Health patients.

  2.  Medical Nutrition Therapy (MNT) to:

  • All patients according to adopted IHS Nutritional Care Standards found in:
    • Nutrition and Diagnosis - Related Care; Sylvia Escott-Stump, 4th Edition.
  • Pediatric, Adult, and Geriatric Inpatients including screening, assessment and intervention
    • Inpatients are initially screened by Nursing staff, followed by screening for level of care and basic intervention by WG-8 AD staff.  Screening includes patient interview for subjective information and record for anthropometrics, diagnoses, diet order with indications for RD referral.
    • Referrals for RD assessment and intervention are made at any point in the admission and screening process.
      • Assessment include patient interview and record review for:  admit diagnosis, diet order, anthropometrics, lab values, medications, and history.
      • Intervention examples include recommendation and provision for: adjustment of food textures or types, supplementation or alteration of nutrient levels, tube feeding (TEN), and/or education of patients and significant family members.
  • Outpatients on an on-call/walk-in basis (8:00 a.m. to 4:30 p.m. Monday through Friday) from:
    • General Outpatient Clinic
    • Diabetes Clinic
    • OB/GYN Clinic
    • Other Specialty Clinics
  • Outpatients on an appointment basis from 8:00 a.m. to 4:30 p.m. Monday through Friday.
  • USPHS Commissioned Officer Nutrition consultation for Primary Provider, Nursing and Dietetics staff 24 hours / 7 days a week.
    • Through residence telephone contact or through cellular phone when in leave status (i.e. for diet order / TEN recommendation, provision of special formulas, etc...).
    • Secondary consultation available by call tree by:
      • All Senior Cook Staff

  3.  Nutrition consultation and education services to various community organizations and groups including, but not limited to:

  • Rural America Initiatives programs such as Early Head Start and Head Start
  • Girls Inc. Mentoring Group
  • Dietetic Intership students
  • Okiciyapi Wellness group
  • Diabetes Inc. Kamp For Kids
  • Rosebud Food Service and Primary Care Provider Staff
