DE0310: Diabetes Online CDE: Native-Centered Nutrition Education
Traditional food ways have a long history of importance and use in health maintenance and disease prevention and treatment in AI/AN communities. Nutrition was traditionally learned experientially with stories, and engaging with foods through planting to food preparation to tasting. However, traditional ways are often underestimated as a part of health services. This session will include presentation of a variety of sensory learning methods that engage patients in learning how to:
Identify carbohydrates from non-carbohydrates
Distinguish whole grains from refined grains
Distinguish starchy vegetables from non-starchy vegetables
Increase the variety of fruits and vegetables eaten
Several tested and useful methods to teach patients about achieving nutrition balance, including innovative use of My Native Plate, My Diabetes Plate and other visual tools for diabetes care and self-management education and active learning will be shared.
Upon completion of this course, participants will be able to:
1. Use visual cues to identify and count carbohydrates on sample plates in order to balance carbohydrates in meals with a variety of non-carbohydrate foods for optimal nutrition.
2. Interact with clients in multi-sensory learning sessions about food, using teach back methods to identify carbohydrates and demonstrate understanding.
3. Share one example of how traditional knowledge of foods is similar to our modern understanding of nutrition and one example of how historic food ways offer insight into optimal nutrition that can be applied today.

Tuition must be paid in full 8 weeks prior to the start date of any course. Request for refunds must be received in writing at least two weeks before the course begins. For each refund request, there will be an administrative charge of $100. No refunds will be made to registrants who fail to attend a course. If IHS CDE program cancels a course, then 100% of the tuition will be refunded.
